When eating at IHOP, do you immediately go for the maple syrup or do you ponder the use of the fruit-based syrups first?

Does Maple Syrup enhance the taste of pancakes?

As a maple syrup fan I will field this one.  Maple syrup is a perfect accompaniement to pancakes, BUT, the supreme addition would be to use Grade A light syrup. That is the syrup from the first tapping of the tree and many of the tappers save that for themselves.  It is more expensive than the medium or dark, but I find the taste sublime

I beg to differ. Coming from "maple syrup" country, Grade B is definately MUCH better. It is the local "secret". As we say around here, "Grade A is for tourists". With the Grade B you get more of the maple flavor. It is the only kind we use. But we agree on one this-it has to be REAL maple syrup, not that corn syrup s**t that Log Cabin and other companies try to pass off as maple syrup.

I don't knowwwww...I know a tree tapper and he brought me some of his private stock of first tap light.  His family has been tapping the farm since the revolution and he says first tap is for private stock, actually he says they drink it as a tea, spoonful or two in a cup of hot water. Yoweee...medium is for sale or when the light runs out, and dark is only for cooking.  He said have the light on your pancakes, biscuits, etc, and have sour pickles with it, it cuts the sweet so you can eat more.  I tried it, I liked it.  :)

It is a matter of taste. Most people I know around here all agree on the Grade B. Carlos once tapped the maple tree that is sitting in the front of house (long before I knew him) and made his own syrup. He won't ever do it again because it made a mess on the ceiling in the kitchen. I'm glad I wasn't around to clean that up.  :P
