"Happy" is "Gelukkig", that's correct. But in Dutch it's more common to wish someone a Prettige Verjaardag (more like a pleasant anniversary).
Wij wensen u een heerlijke dag voor je verjaardag, hebben een goeie!

"Have a good one!" roughly translates to "Veel plezier!"
The trouble with "You" is that it can be translated to both "u" en "je/jij". U is the more formal form of addressing (used in particular to address someone significantly older than you or someone you're not acquainted with), whereas je/jij is used among friends and peers.
