The ones I have chosen on the list are Cucumber, Tomato, onions (especially sauteed in butter-YUMMMMY), garlic, and beans (FRESH green beans and lima beans).  Others are corn, peas, brussel sprouts, carrots, and many others.

Potato, corn, beans, sweet potato, spinach.

Potato, and shape or form...baked, mashed, fried.

Corn on the cob with loads of butter and pepper.

Beans, black beans or pinto beans.

Sweet potato, baked with butter and brown sugar.

Spinach, sauteed with olive oil and garlic.

The best garlic mashed potatoes in the galaxy, and they can be yours for $0.50 per serving, from "hey, we're outa garlic mash" to "holy crap, that's good!" in 30 minutes. 

You haven't lived until you've taken two pounds of potatoes, and one head of garlic (3-4 oz), boiled them for about 10-15 minutes, drained most of the water, thrown the whole steaming mess into the Cuisinart along with half a cup of milk and half a stick (4 oz) of butter, pressed the magic button, and added salt and pepper to taste. 

If you don't want to peel garlic, many grocery stores now carry whole peeled garlic cloves. All the work has been done for you, and the price isn't that much more than raw garlic.  The stuff can cut your prep time to almost nothing.  If I'm only using a few cloves at a time, I'll peel it myself, but if I'm doing 2 pounds of garlic mashed 'taters, I'll  spend the extra 0.50 to save myself half an hour of peeling.

Don't have a food processor?  Don't have a blender?  Get a hand-held blender for $20ish and whip your potatoes half a pound at a time in a coffee mug.  Best $20 you'll ever spend.  (Did I mention I also liked garlic in college?)

Garlic?  Yes, yes you can.  Roasted garlic.  Just take a head of garlic, cut the top off it, drizzle some olive oil on it, and bake.

The other thing you can do with garlic (and another example of the merits of store-bought peeled garlic) is to peel the stuff, rinse it off, throw it into a small bowl of olive oil, and slowly bake it for an hour or so.  Google "bagna cauda".  If the olive oil's good enough, you can skip the anchovies.  You end up with cloves of garlic that you can spread (exactly as you would warm butter) over bread.

Baked beans (honey) had them for the first time the other night!
Carrots - but they have to be fresh and par-boiled, then covered in brown sugar
Potatoes
oOo and Water chestnuts (are they veggies?) :D

Tomato is at the way top of my list. And although it's a fruit, I still use it in things that are generally vegetable style dishes.

I love carrots, spinach (mostly in salads), potatoes, and broccoli.

Radishes are, like, sex to me. I love potatoes too, especially baked on boiled (only those little red ones boiled, though). Cucumbers are very nice in salads...

I do. I like them with onion, parsely, cilanto (sometimes-depending if we have it at the time), and bits of tomato (sometimes-again, depending if we have it).

Cooked veggies don't appeal at all (nasty memories of cabbage from many years ago!)

Cucumber, parnsips and sprouts are also guaranteed to make me hurl...

I DO like them, but for some unknown reason I only eat them when I go to a salad bar.  I never buy a can of them to eat in salads at home.  Seems to extravagant to pay a dollar and a half for a can of beans for just me in my salad (hubby won't eat 'em.)  Weird, huh?

I also like them all smushed up with garlic, lemon, olive oil and Tahini to make hummus (not that I actually make my own homemade)

Oh and they make excellent Fallafels too.  Man I'm making myself hungry

The vegies I mind least are probably the ones with the weakest taste. Like cucumber, carrot, tomato...

The ones I dislike most include Broccoli, Cauliflower, Artichoke, Asparagus, Brussel Sprouts.etc

I've been eating veggies since I was very little, so I enjoy 'em. :) I like...

Carrots, peas, broccoli, corn, cauliflower, zucchini, squash, asparagus, bell peppers, cucumbers, lettuce, artichoke...among others. I purposely did not mention tomato or avocado because they are fruits...although they're often served as if they were veggies.
