Subject: Cheese Lima Beans

Not been a fan of Lima beans, I have no clue about cooking them or baking with them.

Hubby loves Lima beans - especially some sort of Cheesy Lima Bean concoction.

If anyone has a recipe for Cheesy Lima Beans (that isn't just melting velveeta over them)
please, I beg of you to post it for me!!! I will take as many as I can!

Here's one;

Lima Bean Cheese Bake


3 cups Lima beans, cooked, dried and drained
1 medium Onion, chopped
3 tablespoons Catsup
3 tablespoons Flour, whole wheat
1 1/2 cups Cheddar cheese, shredded
1 1/2 cups Milk

Preheat oven to 350F.
Combine beans, onion, catsup, and flour in a shallow 2 quart casserole dish.
Add 1 cup cheese.
Pour milk over beans, top with remaining cheese.
Bake uncovered for 30 minutes until sauce is thickened and bubbling.
As it cools, the sauce will thicken further.


Serves 4. Enjoy! :D

  Lima Bean & Cheese Fondue

Cook 1 lb. lima beans according to package directions.

Grate 1/2 lb. of your favorite cheese.

Rub a heavy saucepan with a clove of garlic.

Pour two cups of dry white wine into the pan.

While the wine is heating, uncovered, over moderately high heat, pour three tablesoons of dry liqueur into a cup.
Stir one tablespoon cornstarch into the liquer. By this time, the wine should begin to foam and bubble.

When the surface of the wine is covered with this foam, add the lima beans and your favorite cheese. Stir constantly.

Do not let the fondue boil. Continue to add the lima beans and cheese until the fondue starts to thicken.
Immediately add the dry liquer and corn starch mixture. Stir and stir some more, until the fondue really starts to thicken.

Add nutmeg, white pepper or paprika, however much of each you desire.
Transfer the lima bean and cheese fondue to an electric skillet adjusted to low heat.

well if you need a good recipe for just about anything else my actual recipe box for that matter
is always open  ;)..i happen to despise lima beans but it sounds reasonably decent  :)

Am I the only one who likes lima beans? Hubby doesn't like them so we don't usually have them. He made me some once (they were dried) and he didn't cook them long enough so they were really hard.  :P  Can't stand canned but I do like frozen.
