I eat red meat so rarely anymore that I really don't care.  I probably don't know the difference.

;D ::)

I used to prefer meat that was well-done, but nowadays I eat it more medium-well.  :)

As long it's chewable, I can eat it ;D

medium..a long long way from ten years ago when it had to be almost black  :o ;D

depends on what kind of meat. If it's beef, like a steak or slice of prime rib I want it medium rare, more on the rare side. I cook a fierce prime rib roast that comes out medium rare and is so good. The recipe comes from Paula Deen.

Bleeding on the plate when you cut it! Though I don't eat red meat really these days. The other half won't eat it unless it's cremated literally.

Medium to Medium Well. I don't want it oozing with blood, but I'd rather not eat a peice of charcoal either.

Ah, you also enjoy it medium-rare, then.

He probably means he's a vegetarian, or he doesn't eat red meat.  If you had asked me this question last year, I would have said the same thing.

Well done. I can't stand to eat partially-cooked meat. :P

Chicken: well done, a bit of charcoaling.

Steaks/hamburgers: Pink in the middle (I could insert a crude joke here, but I'm not gonna...)

Pork: Burnt! Ribs need to have at least 1/4" of carbon on the outside, unless they are slow cooked for 16 hours. Otherwise, I'm glued to the toilet for half a day. BBQ rules.

Hot dogs/hot sausages: Charcoaled and well done inside. Boiled hot dogs make me want to  http://www.inthe00s.com/smile/01/barf.gif

Lamb: Seasoned, and absolutely no fat.

Bacon/sausage/scrapple: Well done, little grease/fat left.

Turkey: It's hard to ruin turkey. Smoked, baked, or deep-fried is okay. White meat gets gravy or butter.

Fish: Never smoked; grilled, fried, or baked works for me.

Sushi: Okay once in a while in small doses. Wasabi is a necessity. So is "sprinkles"; an ingredient whose real name I can't remember at the moment, but it's loaded with MSG. Avocado too. Defintely need avocado!!

Seafood (crab, clams, lobster, mussels, etc.): Boiled or steamed,  with Old Bay seasoning and/or butter.  The only way to eat shrimp is boiled, peeled and chilled with cocktail sauce (heavy on the horseradish).

Other (rattlesnake, deer, froglegs, cat,  ;)): As long as it's cooked, I'm game.

that reminds me of how some people order it around here...."Pittsburgh Rare"..they call it. Basically you throw it on the grill for a few seconds...and that's about it. :P

Down here (I don't know if it's the entire state of Texas) but when you order steak medium rare or lesser, they HAVE to try and talk you out of it.
We went to the Texas Roadhouse one night, and hubby orders his that way - the manager came out and they actually have a form hubby had to fill out stating that he requested his steak to be cooked that way and the restaurant would be no way liable if he became ill from it.

And I agree - Blue/completely raw is just disgusting!

No.  I know a lot of people that like rare roast beef....where it's practically raw save a burnt rim around the meat about 2 cm in.

When I use to eat meat, medium well was always the way I went. I hardly got it real bloody unless it was a prime rib cut - then I didn't mind too much.

It can differ depending on the meat too. Not a fan of undercooked chicken, but something like steak is different. Also depends what I feel like at the time.

I just made a hamburger this evening from a frozen patty, and was it ever good.  I always stab the patty with a fork as it cooks, so the pinkness inside cooks through.  A little pink is good, but it's safer to cook it through

I like my steaks cooked on the outdoor grill, or in the oven on the broiler rack, or even pan fried is fine
http://www.zenreich.com/ZenWeb/images/steak5.jpg and every once in awhile I'll pour some steak sauce on mine http://rds.yahoo.com/_ylt=A0Je5xUWLRZFawwAjvijzbkF;_ylu=X3oDMTA4NDgyNWN0BHNlYwNwcm9m/SIG=12g215qkd/EXP=1159167638/**http%3a//www.foodservicedirect.com/productimages/OT375941S.jpg

I was obsessed with Frank's Red Hot Sauce for a long time (I used to put it on everything...and I would saturate things with it)....but now I have a stomach ulcer and it doesn't mix too well with it. :-\\
