Subject: Battle Of The Macaroni Salads

To go along with the potato salad thread.


This is mine (which I am making today)

Elbows
Mayo (HAS to be Hellman's)
boiled eggs
celery
onion
parsley (fresh is better but dried will do)

My dad is no longer alive, but when I was a kid, he made the greatest macaroni salad on the planet. When holidays happened, people on both sides of my family demanded a pot of that macaroni salad. I remember the night before the 4th, Christmas, Thanksgiving,etc., he spent hours making a ton of that stuff.

I dont remember all the ingredients, but it was pretty basic. Macaroni, mayo(I dont remember which kind, onions(but he made some without onions for those of us that dont like raw onions). A few other ingredients I'm sure, but the most notable thing about his macaroni salad was the small chunks of sharp cheddar cheese he put in it. He cut the cheese into really small squares.

I also make a macaroni salad that is pretty high in demand for family parties.  It has shell pasta, onion, sweet pickle, (with a little of the juice poured in) boiled eggs, mayonaise and miracle whip mixed together, and lots of salt and pepper.  It was my mom's recipe, and it's always a hit.

I had this really wonderful macaroni salad once that had cheese and pineapple in it.  It seemed an odd combination but it really worked.  I don't have the recipe but I wish I did.  I would love some of that right now.  YUM!

My Wife's macaroni salad, I don't know if it's any good, I hate macaroni salad.

We've always done the same thing, but with regular macaroni, dill pickles and just Miracle Whip (although I have made it with both and it's just as good :P)

I like the peppers in mine, too.  I add the sweet relish, but can't eat egg.
