Subject: Easy banana bread

2 eggs
1 c. sugar
2-3 ripe bananas
1 tsp. baking soda
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/2 c. buttermilk
1 tsp. vanilla, rum, or banana extract
1/2 c. chopped nuts
1 tsp. salt
2 c. flour
Combine all ingredients well in a large bowl using a whisk or an electric mixer at medium speed, adding ingredients in the order listed, and flour last. (You can also use a blender, briefly - do not overprocess).
Pour into well greased and floured loaf pans.
Bake 45 minutes at 400°F.

MMMMMMmmmmmm That sounds yummmy! I love banana bread but I'm not much of a baker. I might try it though. :P
