Subject: Eat Your Vegetables!

If you had to eat your vegetables, (and you should) how would you have them?
I really like steamed broccoli with cheese sauce or a great salad with a tangy dressing.
I'm not a fan of peas & carrots (boring)
Anyone have a good veggie recipe?

I love veggies and usually don't need to dress them up with anything, but here's a really tasty recipe to dress up sweet potatoes:

3/4 Cup apple juice
1 lb sweet potatoes, peeled and sliced 1/4 inch thick (about 3 cups)
1 medium cooking apple, coarsley chopped (about 1 cup)
1/8 cup dried cranberries
2 Tbs maple syrup (this is not necessary)
2 Tbs rum (also optional)
1/4 tsp salt

In a skillet, heat apple juice.  Add sweet potato slices spreading evenly.  Cook, covered over low heat for 12 minutes or until potatoes are nearly tender.  Stir in apple, cranberries, maple syrup, rum, and salt.  Cook covered, over low heat for 3 to 4 minutes more or until apple is just tender.

Uncover; boil gently for 3 to 4 minutes more until liquid is syrupy. 

This makes about 4 servings and has about 230 calories.

ministroni soup is probably my biggest and healthiest vegetable intake.  I don't like any vegetables cold and I cant stand green peas 8-P I'll eat then black-eyed though.  http://www.amiright.com/parody/60s/therollingstones123.shtml

I like vegetables to retain a bit of their 'crunch' (crisp-tender, I believe it's called), so for that reason I usually prefer to cook them myself...

I have a simple way that I cook asparagus...I slice it, throw it in a pan with some butter and lemon juice, and saute it for only a few minutes on a medium-high heat... :)

Corn on the cob is the favorite around here (besides potatoes).  My husband and I have opposite taste in vegetables, so it's usually corn or salad.

I love grilled or sauteed veggies. My favorites are mushrooms, summer squash, and zucchini...mmmmm!!!

Hmm, I'm a lot better than i used to be for eating veggies. I tend to steam or roast them.

As a kid, I ate them, but when my folks were not looking, i'd spit them out

These days, I only eat vegatables if they come on a hamburger.  The odd time I will eat raw veggies, but only if I have dip.  You can't have raw vegetables without dip

I don't like peas either... my husband makes fun of me as I push the peas off to the side when I'm eating fried rice.  :D

Sounds like me, LOL!  ;D Even when I eat Campbell's soups (usually the vegetable or beef soups) with peas in them, I pick every single one out of my soup before eating it.

I cannot believe all the peas haters (my daughter included).  I love peas.  Peas and macaroni is an Italian-American staple that I love.

me too...they shouldn't be there... i like asparagus steamed no butter and mushy carrots, broccoli, that white broccoli stuff i cant remember what its called...i like them really tender!!

I love veggies, with the following exceptions:

~Brussel Sprouts - loved these as a kid but detest them now
~Raw Broccoli and Cauliflower - well steamed is great (cheese sauce or better is best), raw is  8-P
~Cooked carrots - I like raw carrots but not cooked. I can tolerate them in stews.
~Canned Asparagus - fresh is great (if the stalks are small), canned is super gross.

Ukrainian food....yummy very full of flavor!!! i love Russian cabbage borsch!!! (but not the red kind...that they serve in USA the true borsch)

I tend to steam them, bake them in the oven, or saute in light butter and garlic. I don't like onion, so garlic is usually my preferred seasoning. Sometimes we'll add soy sauce and a bunch of other flavorings.

I just thought about it, and I have found that I like the following vegetables:

-Broccoflower
-Green beans
-Mushrooms
-Eggplant
-Lettuce (but NO Iceberg!)
-Spinach
-Carrots (prepared certain ways)
-Zucchini
-Most types of Squash
-Tomatoes (Freid green)
-Scallions
-Alfalfa/Clover Sprouts
-Okra
-Corn (white preferred, but yellow is fine, too)

Vegetables I tolerate:

-Broccoli
-Cauliflower
-Red Peppers
-Turnips
-Cabbage
-Peas
-Bok choy
-Daikon
-Tomatoes (red)
-Onions (yellow/white)

Vegetables I detest:

-Brussels Sprouts (Literally, they make me barf)
-Mustard greens
-Parsnips
-Green peppers

I like just about any veggie-yeah even the dreaded brussel sprouts & lima beans-love both of them. The only one I can think off the top of my head that I don't like is cooked spinach-don't mind it raw. And I'm not big on eggplant but can eat it.

One thing that I REALLY HATE with veggies is when they are over-cooked. Many times I prefer them raw but over-cooked is the worse.

I can't stand canned veggies-with the exceptions: Corn/creamed corn, peas, beets, yams, & mushrooms.

I love vegetables!  and being a vegan that's a very good thing.  I'm eating macrobiotic and it's
been a real learning experience, very interesting if anyone has some health problems it's been
very effective with helping those folks. 

Daikon is a very long white radish and is good at dissolving fats, it often comes with
high fat foods in Japanese restaurants. 

Shiitake Mushrooms are also effective at dissolving fats around the heart and elsewhere. 
They are a wonder!  as some of you probably know.  Just look up the health benefits
if you didn't know.

I love vegetables!  and being a vegan that's a very good thing.  I'm eating macrobiotic and it's
been a real learning experience, very interesting if anyone has some health problems it's been
very effective with helping those folks.

I like Portobello mushrooms, also. Button mushrooms are especially tasty in stir-fry recipes.
