Do they belong to some sort of movement back to simple pop music?

I just listened to "Hey There Delilah", and it seemed like a superior version of John Mayer-esque accoustic ballad pop. Yeah, they might be a return to a more simplistic kind of pop. I'd rather that than James Blunt, lol.

Are they not "Adult Contemporary"?

I am not sure about Colbie Caillat (have not heard of him/her before), but Natasha Bedingfield and Plain White T's do have a more earthy sound to them than the typical pop princesses/princes out there these days. I know Natasha is around my age (b. 1981), and maybe with age, our generation are going for more simple tunes instead of hard rock or overly produced songs.
