I grew up with Genesis and N64 in the 90s, so my favs will come from those.

Sonic the Hedgehog 1 and 2 for Genesis
Castle of Illusion Starring Mickey Mouse for Genesis (I was a little kid, ok? :P)
TMNT: Hyperstone Heist for Genesis
Aladdin for Genesis
Mario Kart 64 for N64
Super Mario 64 for N64
Golden Eye for N64
Snowboard Kids 2 for N64
Mario Party 1 and 2 for N64

That's all I can think of right now.

Most of the good ones have been mentioned. I'll add:

Super Mario Kart
Yoshi's Island
NBA Jam
Banjo-Kazooie
Sonic Adventure (barely 90s)

Lots of other great sports titles, but I'm not gonna list them all.

For me it was the original Gran Turismo, released in 1998. That game was the reason I bought a PS1 and have stayed with Sony ever since.

Really, anything that came out on the N64, but the best ones that come to mind are:
Goldeneye 007, Blast Corps, Space Station: Silicon Valley, Body Harvest, Waverace 64, Banjo Kazooie, Perfect Dark, Super Mario 64, Mario Kart 64, and Legend of Zelda: The Ocarina of Time.

I still remember many rainy days spent inside my buddy's living room, huddled around the giant, (well, giant for it's time) 36" CRT TV, playing these gems.
