Before he starts singing the lyrics of  Sledgehammer, Peter Gabriel sings something
that sounds like "Trucking.  Everybody dooze it".  I know this can't be right but I can't

Good question - never thought about it until you mentioned it.  I'm gonna go with:  "Hey yeah, it's what we're do-ing"
"Hey yeah", as in the various times he says "yeah".
"It's what we're doing", as in the last line(s) of the song:  (From the 5:16 album version on "So", track 02)
yea yea yea yea yea yea yea yea yea you! (show for me)
I've been feeding the rhythm,

it's what we're doing, doing
