There's to many to list, so I will just list 5

1 Time After Time - Cyndi Lauper [ I love the acoustic version
2 The Rose - Bette Midler
3I'll be there - The Jackson 5
4 Tiny Dancer - Elton John
5 How much I feel - Ambrosia

I would put down Wonderwall - Oasis, but I'm not sure it fits this category

There's too many to list offhand (from any era, especially the '80s and '90s though), but one thing I've noticed is that alot of my favorite types songs in general seem to be inbetween. Like the rhythm might be closer to being upbeat, but it'll feel more like a love song/ballad in terms of lyrics or the production...although it's not super slow and soft either.

I'm talking about ones like "Forever Your Girl" by Paula Abdul, "Boys of Summer" by Don Henley, "Missing You" by John Waite, "Nothing's Gonna Stop Us Now" by Starship, "Under the Bridge" by RHCP, any Wilson Philips, etc. Sometimes I've seen songs like that get classified as ballads, although it's debateable I guess, lol.
